I recently had to help someone with a project using the Rabbit RCM3720.  and interface these to some AI601 modules.

I was really impressed by how simple it was to get code up and going using the RCM3720 Ethernet Connection Kit. There where no Interrupt Service Routines to write - it all appeared to be too easy. I have attached some of the code for those who are interested.

The thing I liked about the RCM3720 was the fact that the monitor required for debugging is contained in the hardware of the mcu - this means you can debug in real time which is fantastic. The debugger is great too. When you get this 'kit' you also get heaps of free software with the C-compiler.

I'd recommend having a look at this mcu, it's too easy to use.
